Hows is tequila being process and what parts agave is extracted?

Tequila comes from the blue agave tequilana weber, which is harvested and only the hart of the agave is cooked normally in stone ovens for about 30 hours, after cooking the juices are extracted and fermented. The fermented juices are distilled two time minimum and then you have tequila blanco. Tequila Reposado has to be aged in barrels at least 2 months and anejo at least a year.





My personal favorite is Casa Noble which is a 100% blue agave, triple distilled and the best tequila made!

I don't have a lot of time right now to answer but I think www.wikipedia.com explains the process well.... or they have a link to tell you. If you are looking to distill tequila or mescal I am not sure you will find recipes there.
